It's free from refined carbs, rich in protein, and a perfect replacement for high-calorie fried snacks. 🍽️ Ingredients: 🌱 Main Ingredients: - Desi Ghee – 1 tbsp (for cooking in mitti ka bartan) - Garlic (Lehsan) – 4-5 cloves (finely chopped) - Green Chillies – 1-2 (finely chopped) - Onion (Pyaaz) – 1 medium (finely chopped) - Mushrooms – 200 grams (cut into 3-4 slices each, not too fine) - Paneer (Cottage Cheese) – 100 grams (grated) - Fresh Coriander Leaves – A handful (chopped) - Coriander Stems – A few (finely chopped) - 🌶️ Spices (All – ½ tsp): - Salt (as per taste) - Red Chilli Powder - Turmeric (Haldi) - Coriander Powder (Dhaniya) - Cumin Powder (Jeera) - Garam Masala 👨🍳 Step-by-Step Recipe: 🔹 Step 1: Preparing the Base - Take a mitti ka bartan (clay pot) and heat 1 tablespoon desi ghee in it. - Add finely chopped garlic, then green chillies, and let them sauté lightly. - Add finely chopped onions and cook until translucent. 🔹 Step 2: Cooking the Mushrooms - Slice the mushrooms into 3-4 pieces (don’t chop them too fine – we want some texture). - Add the mushrooms to the onion mixture and sauté until they release water and become soft. 🔹 Step 3: Spicing It Up - Add all the spices – salt, red chilli powder, turmeric, coriander powder, cumin powder, and garam masala – ½ tsp each. - Add chopped coriander leaves and stems, mix everything well, and cook for another 2-3 minutes. 🔹 Step 4: Grinding the Mixture - Let the mixture cool slightly. - Transfer it to a blender and blend into a coarse paste (do not make it watery). 🔹 Step 5: Adding Paneer - Add grated paneer generously to the blended mixture. - Mix well until everything binds together.
