High protein Burrito bowl 🌿high fibre 🌿fat loss friendly INGREDIENTS: 🌈For chipotle dressing: 🌿2 dry chipotle chillies(Use dry red chilli if you don’t have chipotle) 🌿1 cup yoghurt 🌿Salt 🌿1 tsp ACV 🌿1 tsp ground cumin 🌿3-4 garlic cloves 🌿1/2 inch ginger ☀Just blend everything and keep in refrigerator until you make other elements 🌈For herbed rice: 🌿1 tsp oil 🌿1.5 cup boiled rice 🌿1 tsp mixed herbs 🌿1 tsp red chilli flakes 🌈For pinto/kidney beans 🌿1 cup boiled beans(add sliced onion, green chilli and salt in cup of boiling water- cover and cook until beans are done and water disappears) 🌈For sautéed veggies: 🌿1 tsp oil 🌿Veggies of choice( m using lots of zucchini, Brussels sprouts, carrots, bell peppers, corn, onion) 🌿Salt 🌿Pepper ☀Add oil to a pan and veggies with salt & pepper. Cover and cook until slightly tender. 🌈For tofu crumble: 🌿1 tsp oil 🌿1 tbsp soy sauce/tamari 🌿300gm tofu 🌿Ground cumin 1 tsp 🌿Chilli flakes ☀Crumble tofu well in the pan and let it cook on low heat, keep stirring in between until it gets bit crispy 🌈Arrange all this on a bed of lettuce. I used 6-7 lettuce leaves and chopped them in big chunks 🌻Macro Split (Per Serving, 3 Servings Total): • Calories: ~460-500 kcal • Protein: ~25-30g • Carbs: ~55-60g • Fats: ~15-18g • Fiber: ~10-12g 🌿I’ve had burritos so many times, always assuming they were a traditional Mexican dish- no idea why! But when I finally made it to Mexico, I realized that’s not the case.
