Ultimate Keto Rustic Bread
2 cups almond flour
1 cup egg whites ( ¾ cup for whipping and ¼ cup for mixing) room temp
1/4 cup room temp water
2 large egg yolks room temp
2 T ground flaxseed
2 T coconut flour
1 T psyllium seed husk powder
2 T extra virgin olive oil
1/2 tsp cream of tartar
1 t apple cider vinegar
1/2 t sea salt
1/2 t baking soda
Preheat your oven to 350°F .
Line an 8x4-inch bread pan with parchment paper.
In a clean, dry bowl, whip ¾ cup liquid egg whites with the cream of tartar using a hand or stand mixer on high speed until stiff peaks form.
In a large mixing bowl, whisk together the almond flour, coconut flour, ground flaxseed, psyllium husk powder, sea salt, and baking soda.
Combine the wet ingredients (excluding whipped egg whites):
In another bowl, mix the remaining ¼ cup liquid egg whites, egg yolks, water, olive oil, and apple cider vinegar. Whisk until smooth.
Gradually stir the wet ingredients into the dry ingredients until you have a thick batter. Avoid overmixing.
Mix the whipped egg whites into the batter.
Pour the batter into the pan, spreading it evenly
Bake in the preheated oven for 50-55 minutes, until it's 200 internal temperature, or until a toothpick inserted into the center comes out clean and the top is golden brown.
For a more golden crust, tent with foil after 30 minutes
Let it cool in vented oven for 30 minutes. Remove from oven and let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
