Or we're going to choose some alternatives. Now, there's also no phytic acid in it, so that means your body's going to be able to absorb more nutrients from the bread, because phytic acid is an anti-nutrient that can potentially block absorption of vitamins and minerals. Now lastly, the molecular structure of the bread has changed through the fermentation process also lowers its glycemic index. In other words, it minimizes the insulin spike when you eat it. That will help keep the body in a fat burning environment. So just make sure that you find a high quality sourdough bread when you do eat this, and I also recommend that whenever you're eating bread that you combine it with some type of protein and vegetable just to minimize that insulin spike even further and keep the body in a fat loss environment.
