High Protein Keto Pizza Ingredients: 3 to 4 eggs 3/4 cup ricotta cheese 3/4 to a cup of mozzarella cheese 4 slices of salami 1/3 cup diced ham 1 spring onion, chopped 2 teaspoons olive oil Salt & pepper to taste Italian seasoning & oregano for egg base Instructions: Prepare the Eggs: In a bowl, whisk the eggs together until well beaten. Cook the Omelette Base: Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Pour in the beaten eggs and let them cook for 2-3 minutes, or until they start to set. Flip once cooked on bottom. Let cook on other other side until firm. Once cooked, slide out of pan to add toppings. Add the Toppings: Spread the ricotta cheese evenly over the partially cooked eggs. Add the slices of salami and diced ham evenly over the cheeses. Sprinkle the mozzarella cheese on top of the toppings. Sprinkle the chopped spring onion on top. Feel free to add any additional toppings. Finish Cooking: Return the assembled pizza back to the pan. Drizzle the remaining teaspoon of olive oil around the edges of the skillet to help the omelette release from the pan. Cover the skillet with a lid or a plate and cook for another 3-5 minutes, or until the cheese is melted and the eggs are fully set.
